4 slices bacon, chopped 2 teaspoons chipotle powder 4 cloves garlic, minced (1) 28 oz can whole tomatoes 1/2 cup brown sugar (not packed) 1/2 cup apple cider vinegar 1/4 cup whole grain mustard 1 Tablespoon Worchestershire sauce Salt to taste Fresh ground pepper to taste 4-6 country style pork ribs, boneless 2 Tablespoons canola oil
Directions
Pre-heat oven to 350 degrees F. Add bacon to a medium saucepan over medium-high heat. Fry bacon until crisp. Add chipotle powder, garlic and onions and cook until onions are soft, about 5 minutes. Add tomatoes, sugar, vinegar, mustard and Worchestershire. Add salt and pepper to taste. Bring to a boil then reduce heat to a simmer and cook for 5 minutes. Remove from heat and let cool. Sprinkle ribs with salt and pepper. Heat a large heavy skillet over meduim-high heat and add oil. When hot, add ribs and brown on both sides. Transfer to a 9"x13" baking dish and pour sauce over ribs. Bake for 1 hour.
