Makes 1 cup Difficulty
One 2 ounce tin of anchovies, rinsed and drained 1 cup gf black Mediterranean olives, pitted and roughly chopped 2 Tablespoons gf capers, rinsed and drained 1 Tablespoon lemon juice 1/2 teaspoon gf dijon mustard 2 Tablespoons cognac or brandy 1/4-1/2 cup olive oil Fresh ground pepper
In a food processor combine all ingredients, except olive oil, and process until blended. While motor is running, add olive oil into food tube. Adjust seasonings.
Serve this spread on toasted gf french bread or gf crackers.
