Cut tortillas into thin strips and then cut strips in half.
Heat a large skillet over medium-high heat; add oil. When hot, add tortilla strips and scallions. Cook and turn until tortilla strips are crisp. Add tomatoes, oregano, salt and pepper. Sprinkle with cheese and heat until cheese is melted. Serve immediately.
