1/2 cup pistachios, chopped 1/3 cup gf bread crumbs 2 Tablespoons Parmesan cheese, grated 1/2-1 teaspoon salt 1/8 teaspoon pepper 2 Tablespoons olive oil 4 cod filets gf Dijon mustard
Preheat oven to 425 degrees F. Line a baking sheet with foil and grease the foil.
Combine nuts, bread crumbs, cheese, salt and pepper in a small bowl. Add oil to crumb mixture and mix until evenly moistened; transfer to a plate.
Fold filets on to themselves to create filets of even thickness. Spread each filet evenly with mustard. Press mustard side of filets into crumb mixture, generously coating filets. Place the filets on baking sheet, crumb side up and sprinkle any remaining crumb mixture over filets.
Bake about 10-12 minutes, until topping is crisp and fish is opaque and flakes easily. Serve immediately.
