1 medium eggplant, cut into 8 1/2 inch slices 1 egg white, lightly beaten 1/2 cup gf breadcrumbs 1/2 cup gf pizza sauce 1/2 cup shredded mozzarella cheese 8 basil leaves
Heat the oven to 400°F. Lightly butter a baking sheet. Dredge the eggplant pieces in egg white. Sprinkle each slice with gf breadcrumbs and press firmly to cover. Bake eggplant for 15 minutes or until lightly browned.
Remove the baking sheet with the eggplant from the oven and top each slice with gf pizza sauce and mozzarella cheese. Bake for about 4 minutes or until the cheese melts. Garnish each slice with basil leaves. Serve immediately.
