2 pints strawberries, hulled and cut in half 1 Tablespoon lemon juice 1 Tablespoon sugar 1 cup whipping cream 2 Tablespoons powdered sugar 1 teaspoon vanilla 1/4 cup sugar, for sprinkling on top
In a bowl combine strawberries, lemon juice and 1 tablespoon sugar in a bowl.
Evenly divide strawberry mixture into four 1 cup souffle dishes or large ramekins; set aside.
In a separate bowl, whip cream and stir in powdered sugar and vanilla.
Spoon whipped cream mixture over berries, flattening with a knife so that tops are flat.
Preheat a broiler. (You can also carmelize sugar with a torch) Sprinkle about 1 tablespoon of sugar over each dish and then place dishes directly under broiler. Place a baking sheet under the dishes to catch any cream that may bubble over. Broil until cream bubbles and turns brown. Serve immediately.
This dessert will also work with other berries or soft fruit, such as peaches.
