Potatoes w/Garlic & Parsley

Ingredients
4 large, whole red potatoes
1/4 cup olive oil
4 garlic cloves, roasted
3/4 teaspoons salt
1/2 teaspoon pepper
1 Tablespoon parsley, chopped
Directions
Coat a glass baking dish with butter.
In a large saucepan cover potatoes with boiling, salted water until just tender.
Preheat oven to 400 degrees F.
Remove potatoes from water and place in baking dish. With a fork, push tops of potatoes in so that insides of potatoes are exposed.
In a small bowl combine oil, mashed roasted garlic, salt and pepper and pour evenly over potato tops.
Bake for 1 hour or until potatoes are crisp and brown on top. Sprinkle with parsley.
