Halibut w/Parmesan Parsley Butter

Ingredients

1/4 cup butter, softened
1/4 cup Parmesan cheese, shredded
2 Tablespoons parsley, chopped

4 halibut fillets
Salt & pepper
Directions
In a small bowl combine butter, Parmesan cheese and parsley. Spoon butter mixture onto a sheet of wax paper and roll into a tube shape. Place tube of butter mixture in freezer.

Preheat broiler. Salt and pepper halibut fillets and broil for about 3-5 minutes until top is browned and fish is firm to touch. Remove from broiler and remove bottom skin. Remove butter from freezer and cut into slices. Place 2-3 slices on top of fish. Soften butter with a torch or place under the broiler just long enough to begin to melt butter. Serve immediately.

Although I’m usually one to go for spicy, robust entrees and more mild side dishes, I enjoyed this fish recipe as much for its ease of preparation as for its mellow taste. I made the Parmesan-Parsley butter in less than 10 min. early in the AM, put it in the ’fridge to firm all day while I did other things and then baked the dish for the PM meal. Also, this recipe gave me a chance to switch things up by pairing this entree’s mild taste with a side dish that had more ’zing’. The only change I made to the ingredients was that I substituted Talapia fillets for the Halibut. Not only were the Talapia already in my freezer but, since they were skinless, I could skip the step where I had to try to skin 4 very hot fish fillets. Additionally, I only have to cook for two so I prepped only 2 fillets and returned the remaining 1/2 of the Parmesan-Parsley butter to the ’fridge to be used later in the week over vegetables or baked potatoes. Overall, a nice change from the usual ’squeeze of lemon’ fish recipes and using the butter with other dishes increases the recipe’s versatility. This is something I’ll make again.
