4 halibut filets Salt and pepper 1/4 cup parmesan cheese, grated 1/4 cup butter, softened 1 Tablespoon chives, chopped
For carmelized onions: 1 Tablespoon butter 1 Tablespoon olive oil 1-1/2 pound onions, thinly sliced 1/2 teaspoon salt 1/4 cup dry white wine Salt and pepper
Directions
For parmesan butter: Mix parmesan cheese, chives and butter together until well blended. Spoon onto wax paper or plastic wrap and mold into a tube shape. Place in refrigerator to harden.
For carmelized onions: Heat a large skillet over medium heat and add butter and oil. When butter has melted, add onions and reduce heat to lowest setting. Sprinkle with salt and cook for up to an hour, stirring onions many times. Once onions are soft, increase heat to medium-low and continue to cook until well browned. Add wine and stir to loosen browned bits. Cook until wine has cooked away and season with salt and pepper.
For halibut: Season with salt and pepper and broil for 3-4 minutes on each side until fish is opaque and flakey.
Remove from broiler to serving plates and top with sliced parmesan butter; placing a spoonful of carmelized onions next to halibut.
