Chicken with Tomato Wine Sauce

Ingredients

1 Tablespoon butter
1 Tablespoon olive oil
1 chicken, cut into 8 pieces
1 onion, chopped
3 carrots, chopped
3 tomatoes, quartered
1 tarragon sprig
1 cup dry white wine
1 Tablespoon tomato paste
3/4 cup creme fraiche*
1/4 teaspoon red pepper flakes
Salt and pepper to taste
Directions
In a large skillet over medium heat, melt butter with oil.

Salt and pepper chicken pieces and add to skillet. Brown on all sides.

Transfer chicken to a large pot or dutch oven.

Add onion to skillet and saute for about
5 minutes. Add onion to pot with chicken. Add the carrots, tomatoes, tarragon and wine to pot with enough water to cover chicken. Bring to a boil, reduce heat to low and simmer for 30-45 minutes, until carrots are very soft. Transfer chicken to a plate; tent with foil to keep warm.

Place liquid and vegetables into a food processor and puree until smooth.

Return sauce to pot and stir in tomato paste and creme fraiche. Add chicken back to pot and simmer for 5 minutes.

Serve chicken with sauce.
