Balsamic varnish 1 beef steak tomato, sliced in 1/4" slices 1 large round of fresh mozzarella, sliced in 1/4" slices 4 small handfuls of gourmet salad greens, with frisee Basil oil Salt and pepper to taste
This salad is served and prepared on individual plates. On each plate, drizzle a small amount of balsamic varnish. Top with tomato slice. Place a slice of mozzarella on each tomato slice. Toss greens with a small amount of basil oil and season with salt and pepper. Top slice mozzarella with a small mound of seasoned greens. Serve.
This is a very elegant and delicious salad. The star of this salad is the ’balsamic varnish’.
For balsamic varnish: In a small saucepan combine 1 cup balsamic vinegar and 1/4 cup port wine. Bring to a boil; reduce heat to a simmer. Simmer until mixture is reduced to 1/4 cup.
For basil oil: Mix 1/4 cup olive oil with 1/4 cup chopped basil. Place in a container and let sit overnight.
