1 firm pear 4 teaspoons balsamic varnish 4 slices soft goat cheese 4 small handfuls gourmet greens 1 Tablespoon basil oil Salt and pepper
Directions
On individual plates drizzle a small amount of balsamic varnish.
Slice a pear into 1/4" slices, removing core.
Place one pear slice on top of balsamic varnish and top with one slice of goat cheese.
Toss greens with basil oil and season with salt and pepper.
Place a small mound of greens on top of goat cheese. Serve immediately.
Tips
This is a very elegant salad served on individual plates.
For balsamic varnish: Add 1 cup balsamic vinegar and 1/4 cup port wine in a small saucepan and bring to a boil. Reduce heat to a simmer and cook until mixture is reduced to 1/4 cup.
For basil oil: Combine 1/2 cup olive oil and 1/4 chopped basil, in a small container with a lid; let set overnight.
