Makes 4 servings. Difficulty
2 teaspoons olive oil 1 garlic, minced 1 cup basmati rice 2 cups gf chicken broth 1/4 cup green onions, chopped 2 teaspoons fresh thyme, chopped Salt and freshly ground black pepper
Heat oil in a heavy medium sauce pan over medium heat. Add garlic and sauté until just tender, about 30 seconds. Add rice and sauté for 2 minutes. Add gf chicken broth; bring to a boil. Cover and reduce heat to low; simmer 20 minutes or until all liquid is absorbed.
Remove from heat, fluff with a fork and stir in green onions and thyme. Adjust seasonings to taste with salt and freshly ground black pepper. Serve.
