Ingredients
1 Tablespoon butter One tube pre-made polenta One package Hormel’s pepparoni slices One can gf pizza sauce (we used Muir Glen’s Organic Pizza Sauce) Mozzarella cheese, sliced
Directions
Slice polenta into 1/4" slices.
In a non-stick skillet melt butter and add polenta slices. Brown on both sides over medium-high heat.
Preheat broiler.
Remove polenta slices to a baking sheet and top with pizza sauce, one slice pepparoni and a slice of mozzarella cheese. Broil until cheese is melted and lightly browned on top. Serve immediately.
Tips
This is a wonderful, quick appetizer, snack or kids lunch.
Food Merchants brand prepared Polenta is available in most grocery stores and health food stores. This product comes in a tube shape and is easy to slice.
We used Hormel’s Pepparoni, which even states on the package that it is gluten-free!
