Makes 4-6 servings. Difficulty
1 gf French bread baguette, cut into 1/8" slices Olive oil 1 garlic clove, cut in half 6 roma tomatoes, cut into 1/4" slices Kosher salt 1/2 cup fresh basil leaves 1/4 cup fresh grated parmesan cheese
Lay baguette slices on a baking sheet and lightly brush or spray with olive oil.
Broil baguette slices for about 30 seconds or until nicely toasted. Turn and repeat with other side. (Watch very carefully to prevent baguette slices from burning.) Remove toasted baguette slices from oven and rub each piece with cut side of garlic clove. Set aside.
Place a piece of aluminum foil on a baking sheet. Drizzle about 2 tablespoons olive oil on baking sheet. Place tomato slices, in a single layer, on baking sheet. Turn slices so that each is coated lightly with olive oil. Sprinkle tomato slices with kosher salt.
Place tomatoes under broiler and broil for about 10 minutes. Tomatoes should be nicely roasted and blackened in spots. Remove tomatoes from broiler.
To serve, place a basil leaf on toasted baguette slice (crostini), top with a roasted tomato slice and garnish with freshly grated parmesan cheese. Serve immediately.
