3 yukon gold potatoes 3 red potatoes 3 purple potatoes 2 garlic cloves, unpeeled Olive oil 3 sprigs of rosemary Salt and pepper
Directions
Preheat oven to 450 degrees F.
Wash all potatoes and cut into fourths.
Butter a glass baking dish; add potatoes and garlic and spray with olive oil, or sprinkle a couple of tablespoons of olive oil over potato mixture, tossing until well coated.
Season with salt and pepper; top with rosemary sprigs and place in oven. Bake for 30 minutes, tossing once during baking. Serve immediately.
Tips
Purple potatoes are available in co-ops and better grocery stores. The purple potato has a purple skin and purple flesh, but the taste is not unlike other potatoes.
