Ingredients
1/2 cup orange juice 1-1/2 Tablespoons gf soy sauce 2 garlic cloves, minced One 1 inch piece of fresh ginger, peeled & minced Salt and freshly ground black pepper to taste 1-1/4 pounds pork tenderloin 1 Tablespoon unsalted butter 1 Tablespoon extra virgin olive oil
Directions
Preheat oven to 350°F.
In a small bowl, combine orange juice, soy sauce, garlic and ginger. Adjust seasonings to taste with salt and freshly ground black pepper.
Season pork tenderloin generously on all sides with salt and freshly ground black pepper.
In an oven-safe pan heat oil and butter over medium-high heat (large enough to accommodate the tenderloin). Add pork and brown on all sides.
Bake, turning halfway through, basting frequently, for about 30-40 minutes or until done. Remove pork from pan, transfer to a platter and tent with foil; let rest for 5 minutes.
