Makes about 1 cup Difficulty
1 inch fresh horseradish, finely chopped 5 garlic cloves, chopped 2 cups heavy cream Salt and pepper to taste
In a saucepan, combine horseradish, garlic and cream. Cook over low heat until mixture simmers and continue to simmer for 15 minutes or until mixture is reduced by half. Strain off solids and season with salt and pepper.
