Ingredients
1 Tablespoon extra-virgin olive oil 1 medium zucchini, sliced 1 yellow squash, sliced 1/2 yellow onion, sliced Salt and freshly ground black pepper 1/2 cup gf pesto 1/4 cup parmesan cheese, grated
Directions
Butter a shallow baking dish (9"x11").
Preheat broiler.
In a large skillet heat olive oil over medium heat. Add onion and cook for 2-3 minutes or until softened. Add zucchini and yellow squash and sauté for 3 minutes or until just tender.
Transfer vegetables to prepared baking dish. Spread gf pesto over vegetables; topping with parmesan.
Broil zucchini for 2 minutes or until cheese is melted. Serve immediately.
