Ingredients
1/4 cup gf soy sauce 1 teaspoon cornstarch 1 teaspoon sugar (or more to taste) 1 Tablespoon peanut oil 1 teaspoon sesame oil 1/4 cup onion, sliced 1 garlic clove, minced 1 red bell pepper, sliced 1/2 yellow bell pepper, sliced 2 green onions, cut into 1" pieces 1 pound large shrimp, shelled, deveined & (tails left intact)
Directions
In a small bowl, whisk together soy sauce, cornstarch and sugar. Set aside.
In a large skillet heat peanut oil and sesame oil over medium-high heat. Add onions and garlic; sautéing until tender, about 2 minutes. Remove onions and garlic; transfer to a plate.
Add shrimp to skillet and cook until pink and opaque, about 3-5 minutes. Transfer to a plate.
Add red peppers, yellow peppers and green onions to skillet and sauté until just tender.
Return onions and shrimp to skillet. Add gf soy sauce mixture to pan and stir to coat shrimp and vegetables. Let cook for 2 minutes or until sauce thickens. Serve immediately.
