1 Tablespoon unsalted butter 1 teaspoon peanut oil 2 garlic cloves, minced One 1" piece of fresh ginger, peeled and minced 2 Tablespoons cilantro, chopped 1 pound large shrimp, shelled and deveined 1 Tablespoon fresh squeezed lemon juice Salt and freshly ground black pepper
In a large skillet heat butter and peanut oil over medium-high heat. Add garlic and ginger; sauté for 30 seconds. Add shrimp and cook for 3-5 minutes or until shrimp are pink and opaque. Add cilantro and lemon juice. Adjust seasonings to taste with salt and freshly ground black pepper.
