Ingredients
8 small carrots, (preferably organic, cut into 1-1/2" pieces 2 garlic cloves, skins left on 2 thyme sprigs 1 Tablespoon extra-virgin olive oil Kosher salt
Directions
Preheat oven to 400°F.
Place carrots, garlic and thyme sprigs in a 8" square baking pan. Toss with extra-virgin olive oil and season with kosher salt.
Place baking pan in oven and roast carrots for 30-40 minutes or until tender. Discard garlic and thyme sprigs and serve.
