Turkey Cutlets w/Mustard & Wine Cream Sauce

Ingredients

1-1/2 pounds turkey cutlets or tenders
Salt & pepper
1/4 cup olive oil
1 shallot, minced
1 garlic clove, minced
1/4 cup gf chicken broth
1/2 cup cream
1/4 cup dry white wine
1 Tablespoon gf grainy mustard
Directions
In a saute pan, cook turkey in 2 tablespoons oil, browning on both sides.
Transfer to a plate, cover and keep warm.

Add shallots and garlic to pan; saute, adding 1 tablespoon oil if necessary.

In a small bowl, mix together chicken broth, wine and mustard.

Add mixture to saute pan. Add cream to mixture, heat and let reduce by 1/2 volume. Season to taste with salt and pepper.

Return turkey to pan and reheat, coating with sauce. Serve with sauce.
