Pecan Crusted Chicken w/Broiled Pineapple

Ingredients

4 chicken breasts, skinless, boneless &
flattened
Salt & pepper
1 cup gf flour
1 egg, beaten
1/4 cup milk
1-1/2 cups pecans, toasted with 1 Tablespoon butter and 1 Tablespoon gf brown sugar & finely chopped
1 Tablespoon butter
1 Tablespoon olive oil
4 slices fresh pineapple, peeled, cored & cut into slices and then halved to make 8 half slices
2 Tablespoons butter, melted
2 Tablespoons gf brown sugar
Directions
Preheat oven to 350 degrees F.

Place flour in a plate; set aside.

Mix egg and milk together; pour into a second plate and set aside.

Place toasted, sweetened pecans on a third plate; set aside.

Season chicken breasts on both sides with salt and pepper.

In a large heavy skillet heat 1 tablespoon butter and 1 Tablespoon oil.

Dip chicken in flour then egg mixture, then pecans.

Place each chicken breast in hot skillet and brown on both sides.

Transfer chicken to a baking dish and bake in oven for 15 minutes.

Meanwhile, place pineapple slices on a baking sheet; drizzle with melted butter and sprinkle with brown sugar.
Broil until just browned.

To serve: Top each chicken breast with two pineapple slices.
