5 beets 2 Tablespoons salt 4 Tablespoons butter 1 cup onions, chopped 4 tart apples 1 Tablespoon sugar 1/4 teaspoon cinnamon 1/2 teaspoon salt 1/4 cup raspberry vinegar
Wash and trim beets and place in a large pot and cover with water. Add salt and bring to a boil. Reduce heat and simmer, partially covered about 45 minutes or until beets are very tender. Drain, cool, peel and chop. Melt butter in a medium saucepan and add onions. Saute until tender and golden. Meanwhile, peel, core and chop apples. Add apples, sugar, cinnamon, salt and raspberry vinegar to onions and cook on low until apples are very tender. Transfer mixture to a food processor, add chopped beets and puree. Adjust seasonings and serve.
