One 6-ounce can tuna in water, well drained 1/4 cup mayonnaise 1/4 cup shallots, minced 2 Tablespoons fresh parsley, chopped 1 garlic clove, minced Zest of 1 lemon 1/8 teaspoon ground cumin Salt and freshly ground black pepper 10 cherry tomatoes, halved 1 English cucumber
Place tuna in a medium bowl. Flake with a fork. Mix mayonnaise, shallots, parsley, garlic, lemon zest and cumin with flaked tuna. Season to taste with salt and freshly ground black pepper.
Cut cherry tomatoes in half. Scoop out insides with a small melon baller. Season insides of tomatoes lightly with kosher salt.
Cut cucumber into 1/2" slices. Using a melon baller, scoop out some seeds in center of each cucumber slice, being careful not to scoop through to bottom.
Spoon tuna mixture into tomato halves and place on top of cucumber cups. Serve immediately.
