Arroz con Pollo w/Steamed Tortillas

Ingredients

12 corn tortillas, steam at serving time
2 Tablespoons olive oil
1 1/2 pounds chicken pieces, generously seasoned with salt and pepper
1/2 to 1 pound gluten free sweet or Italian sausage, cut in 2" pieces
1 small onion, chopped
1 medium green or red pepper, cut in 1/2" dice
4 garlic cloves, minced
1 1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/2-1 teaspoon chili powder
1 teaspoon ground tumeric
1/2 cup crushed tomatoes
1/2 cup dry white wine
1 bay leaf
2 cups medium grain white rice
2 1/4 cups water, enough to cover rice
1/4 teaspoon crushed red pepper
Directions
In large skillet with tall sides, saute chicken in oil until golden on all sides, about 7-10 minutes.

Transfer chicken to platter.

Saute sausage until browned, transfer to platter.

Pour off excess oil, leaving 1 tablespoon in pan. Reduce heat to medium ; saute onion, pepper, and garlic until softened, about 5 minutes.

Return chicken and sausage to pan; add cumin, paprika, chili powder, tumeric and crushed red pepper; stir. Cook 1 minute and add tomatoes, wine, and bay leaf. Increase heat to high, stir and cook for 2 minutes. Add rice and water. (Make sure water covers rice) Bring to a boil. Cover and reduce heat to a simmer. Cook until rice is done and liquid is absorbed, about 35 minutes. If rice is done but soupy, remove cover and cook gently until liquid evaporates.

Steam tortillas.

Toss rice and let sit 5 minutes before serving. Serve with heated tortillas.
Tips
Gluten-free sausage can be found at health food stores or by requesting it directly from a butcher.

This was amazing!!!!! We served it with sour cream and avocado; and of course some hot sauce. Everyone loved it. Compliments all around. I used the Hot italian sausage and left out the crushed red pepper. It had just the perfect amount of spice.

This is good, but I would recommend adding extra spice if you want more of a kick. Very filling, tastes great with sour cream on top.
