Ingredients
1/2 Tablespoon olive oil 1 chicken cut into 8 pieces 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1/2 cup Major Grey’s Chutney 1/2 teaspoon curry 1/2 cup gf chicken broth 1 sprig of fresh rosemary
Directions
Preheat oven to 425°F.
Skin chicken pieces and pat dry with paper towels.
Drizzle olive oil in a medium baking dish (large enough to accomodate chicken in one layer). Place chicken in baking dish. Season chicken generously with salt and freshly ground black pepper.
In a small bowl, combine chutney, curry, salt, pepper and gf chicken broth. Pour chutney mixture over chicken pieces. Lay rosemary sprig across chicken.
Place in oven and bake, (basting with pan juices periodically) for 30 minutes or until juices run clear when pierced with a fork.
Remove chicken from oven and tent with aluminum foil for 5 minutes then serve.
