One 3 pound roasting chicken 1/4 cup honey 1-1/2 Tablespoons grated orange rind 1 Tablespoon ground cumin 1/2 teaspoon salt 1/8 teaspoon black pepper 1 garlic clove, minced
Preheat oven to 400 degrees F.
Remove and discard giblets and clean chicken. Trim excess fat. Starting at neck, loosen skin by inserting fingers and gently pushing between skin and meat.
Combine honey and remaining ingredients and rub mixture under loosened skin and over breast and legs. Lift wings up and over back and tuck under chicken. Place chicken, breast side up, on a foil-lined broiler pan. Pierce skin several times with fork.
Cover loosely with foil and bake at 400 degrees F for 30 minutes. Bake an additional 40 minutes or until thermometer reads 180 degrees F. Let stand for 10 minutes. Discard skin. Serve.
