1 pound ground round 1 teaspoon minced garlic 1 onion, chopped 2 teaspoons chili powder 1 teaspoon salt 1/2 teaspoon cumin powder 1-1/2 cups gf fresh salsa 1 cup corn, frozen or canned 1/2 cup black olives, sliced One 15 ounce can kidney beans One 16 ounce tube of plain or cilantro polenta 1 cup cheddar cheese, shredded
Preheat oven to 350 degrees F.
In a large skillet brown ground round over medium-high heat. Add garlic, onion, chili powder, salt and cumin; stir to blend. Add salsa, corn, olives and beans to ground round mixture; stir to blend.
Grease a 9" pie plate and crumble polenta to cover bottom of plate. Top with ground round mixture, sprinkle with cheese and bake for 20 minutes.
Gf fresh salsa can be found in natural food stores or food co-ops. Look for it packaged in plastic tubs in the refrigerator section.
