4 ounces dried gf spaghetti pasta (we used Tinkyada’s) 4 chicken breasts,skinless & boneless, flattened with a mallet 1 egg 1/4 cup milk Salt & pepper 3 Tablespoons parmesan cheese 1 Tablespoon olive oil 4 slices mozzarella cheese 2-1/2 cups gf pasta sauce (we used Muir Glen) 2 Tablespoons fresh parsley, chopped
Directions
Preheat oven to 425 degrees F.
Cook pasta according to package directions.
In a small boel beat egg and milk together. Dip flattened breasts in egg mixture, then sprinkle with salt, pepper and parmesan cheese.
Heat a large oven-proof skillet over medium-high heat and add oil. Add chicken when hot and brown on both sides.
Top chicken with mozzarella slices and place skillet in oven; bake for 15 minutes.
In a saucepan bring pasta sauce to simmer.
To serve, spoon equal amounts of pasta on each plate, top with chicken breast and cover with equal portions of sauce. Garnish with fresh chopped parsley.
