2 zucchini 1 Tablespoon butter 2 Tablespoons Parmesan cheese, grated 2 Tablespoons Gruyere cheese, grated Salt and pepper
Preheat broiler. Parboil zucchini until just tender, do not overcook. Cut zucchini in half lengthwise and remove centers with a spoon. Place zucchini on a baking sheet and sprinkle with salt and pepper. Fill each zucchini with grated cheeses and dot with butter. Place under the broiler until golden and bubbly. Serve immediately.
