For the blintzes: 3/4 cup gf flour 1-1/4 cup milk 3 eggs 2 Tablespoons unsalted butter, melted, plus more to coat the pan 2 teaspoons sugar pinch of salt
For the filling: 1-1/4 cup small curd cottage cheese 2 Tablespoons cream cheese 1 egg 1 Tablespoon sugar 1 teaspoon vanilla extract 1/4 teaspoon salt Zest of 1 lemon 1 cup fresh blueberries Powdered sugar 2 Tablespoons unsalted butter 1 Tablespoon canola oil
Directions
Combine the gf flour, milk, eggs, 2 tablespoons melted butter, sugar and salt in a food processor or blender. Process until smooth. Pour the batter into a pitcher and cover with plastic wrap and let stand for 20 minutes. Place a seasoned crépe pan or non-stick pan over medium heat. Coat the pan with a little butter. Whisk the batter and pour about 3 tablespoons into the pan, lifting the pan off the heat and rotating it so that the batter forms an even layer. Cook until the top is dry and set and the underside is light golden in color. Remove the blintz to a sheet of wax paper. Continue this process with the rest of the batter, buttering the pan and stirring the batter before starting each one. Stack the finished blintzes between sheets of wax paper.
Meanwhile, combine the cottage cheese, cream cheese, egg, sugar, vanilla, salt and lemon zest in a food processor or blender. Process until smooth.
When blintzes are cool enough to fill and roll; spoon the filling into the center of the uncooked side of the blintzes. Fold the sides of each blintz around the filling to form a rectangular package. (At this point, the filled blintzes can be wrapped airtight and frozen for up to a month.)
In a large non-stick skillet, heat 2 tablespoons of butter and 1 tablespoon canola oil over medium heat. Add the blintzes, seam-side down, and cook until golden brown on both sides. Transfer the blintzes to a paper towel, allowing to drain briefly. To serve, top with fresh blueberries and powdered sugar.
