2 Tablespoons olive oil 2 medium garlic cloves, minced 4 fresh thyme sprigs 2 bay leaves 6 large red potatoes, sliced into 1/4 inch slices 1/2 cup gf chicken stock Salt and freshly ground black pepper
In a large skillet heat olive oil, adding garlic, thyme, and bay leaves. Stir over medium-low heat until garlic is fragrant, about 1 minute. Add potatoes to pan along with gf chicken stock and 1 teaspoon salt. Cover and simmer rapidly over medium heat, stirring often. Continue simmering until potatoes are just tender, about 10 minutes.
