Blackened Steak w/Cajun Rub

Ingredients

For cajun rub:
1 Tablespoon black peppercorns, cracked
1 Tablespoon salt
2 teaspoons fennel seeds, crushed
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 teaspoon ground sage

For steak:
4 beef filets
Directions
Blend all rub ingredients together and generously coat both sides of filets.

Heat a large heavy skillet over high heat until very hot. Place filets in skillet and cook until blackened on outside. This should only take a few minutes.
Serve immediately.
Tips
Blackening meat or fish will create smoke in the kitchen. Be sure you can ventilate the area.
