2 cups long grain rice 2 cups water 1/2 teaspoon salt 1 Tablespoon butter, melted Zest of half a lemon 1 teaspoon lemon juice
Wash rice until water runs clear. Add water, salt and butter to rice and bring to a boil. Cover and reduce heat to lowest setting. Cook for 25 minutes. Add lemon zest and juice and mix lightly. Serve immediately.
