1 small onion One 2" piece ginger 6 cups gf beef broth 6 star anise 1 teaspoon salt 1 teaspoon sugar 1 pound tender beef, cut into thin strips 16 ounces rice noodles 3 scallions, thinly sliced 1 onion, thinly sliced 10 cilantro sprigs, chopped
Serve with: Bean sprouts basil leaves cilantro leaves red chili peppers, sliced lime or lemon quarters fish sauce gf hoisin sauce hot chili sauce
Directions
Place ginger and onion on a baking sheet and broil until they look burned. Crush ginger with the side of a knife and set aside.
In a large saucepan add broth and bring to a boil. Reduce heat to simmer and add onion, ginger, star anise, salt and sugar. Simmer for 30 minutes.
Soak noodles in warm water until soft. Drain and add to broth and cook for 5 more minutes, bringing broth back to a boil.
Divide noodles, raw beef, scallions, onions and cilantro into individual bowls. Pour boiling hot broth to cover noodles and serve immediately. (See 'Tips' regarding beef).
Tips
It is very important to use very tender beef for this recipe. The beef is not 'cooked', but is added to the soup raw. It cooks in the hot broth.
