2 pears, cored and quartered and then each quarter, halved 16 slices pancetta Fresh ground pepper
Prepare a fire for grilling, oiling the grill.
Wrap each pear eighth with a slice of pancetta and secure with a toothpick. Place on grill over medium heat. Turn to grill on all sides, about 10 minutes. Remove from grill and sprinkle with pepper. Serve immediately.
This recipe is best with firm pears, such as Bosc.
