Ingredients
For vinaigrette: 1/2 cup walnut oil 2 Tablespoons white wine vinegar 1 Tablespoon lemon juice 1 teaspoon honey 1/2 teaspoon salt 1/4 teaspoon pepper
For salad: 2 apples, cored but not peeled 4 Tablespoons goat cheese 4 handfuls gourmet greens 1 handful baby spinach leaves 2 Tablespoons walnuts, chopped Salt and pepper to taste
Directions
For vinaigrette: Combine all ingredients and mix well.
For salad: Prepare a fire for grilling.
Stuff each apple with 1 tablespoon cheese and wrap individually with foil. Place on sides of grill over low heat for about 10 minutes.
Meanwhile, wash, spin and toss greens in a bowl with vinaigrette. Season to taste with salt and pepper.
Divide greens among four salad plates. Remove apples from foil and cut in half. Place an apple halve along side salad greens. Garnish with walnuts.
