Makes 4 burgers. Difficulty
1 pound ground beef Salt and freshly ground black pepper Olive oil 4 slices ripe beefsteak tomatoes 4 slices fresh pineapple, cored and cut into cross-wise slices 1/2 cup gf catsup 1 Tablespoon gf soy sauce 3 Tablespoons sweet rice wine 1 Tablespoon + 1 teaspoon gf brown sugar 4 Tablespoons gf mayonnaise 4 slices cheddar cheese 4 slices red onion 2 cups mixed greens
Form ground beef into patties. Season with salt and freshly ground black pepper. Lightly spray patties with olive oil.
In a small bowl, combine gf catsup, gf soy sauce, sweet rice wine and brown sugar.
Place burgers on grill 4 minutes. Flip and top with cheese slices. Add pineapple to grill (next to burgers) and brush pineapple with catsup mixture. Continue to grill burgers for about 4 more minutes or until done. Flip pineapple slices after 2 minutes. Remove burgers and pineapple slices from grill.
To assemble: lay some mixed greens on each plate. Top greens with pineapple slices followed by burgers. Spoon catsup sauce and a small amount of gf mayonnaise over burgers. Top with fresh tomato slices and red onion. Garnish with additional gourmet greens.
