1 pound fresh green beans, washed and trimmed 1 Tablespoon butter Salt and freshly ground pepper to taste 1/2 cup hazelnuts, roasted, peeled & chopped
Blanch beans in salted, boiling water for 3-4 minutes or until just tender. Drain. Immediately plunge beans in ice water. Let sit in ice water for 1 minute. Drain. (This can be done well-ahead of serving.)
When ready to serve, heat 1 tablespoon butter in a medium skillet. Add blanched green beans and hazelnuts and sauté for 1 minute. Season with salt and freshly ground black pepper. Serve immediately.
To roast hazelnuts: Preheat oven to 350 degrees F. Place hazelnuts on a baking sheet and bake for 15 minutes. Remove nuts from oven and cover baking sheet with a clean dish towel and let set for 10 minutes. Rub nuts together in the towel, or in your hands to remove skins. Chop the nuts coarsely.
