Pasta Salad w/Corn & Black Beans

Ingredients

8 ounces gf macaroni
1 garlic clove, minced
1 shallot, minced
1 small red bell pepper, chopped
1 fresh ear of corn, remove corn from cobb
One 14.5 ounce black beans, rinsed
2 heaping Tablespoons cilantro, chopped
1/4 cup gf mayonnaise
1 Tablespoon gf dijon mustard (Maille - old style dijon)
2 teaspoons balsamic vinegar
Salt and freshly ground black pepper to taste
Directions
Prepare gf macaroni according to package directions. Drain and set aside.

Mince garlic. With flat side of a chef knife, smash minced garlic with a pinch of salt, into a paste consistency. This will remove some of bitterness from the fresh garlic.

In a large bowl, combine gf macaroni, garlic, shallot, bell pepper, corn, black beans and fresh cilantro. Toss well. Mix in gf mayonnaise, gf dijon and balsamic vinegar. Continue to mix until salad has a light coating throughout. Season to taste with salt and freshly ground black pepper.
Tips
We prefer Tinkyada’s gf macaroni noodles for both taste and texture.

This is a great salad to take to parties! No one will know it is GF. My husband renamed it Southwest Pasta Salad. (Tinkyada elbow noodles held up great!)
