Ingredients
1 head of garlic 2 teaspoons olive oil 1 cup great northern beans, rinsed and drained 1 cup gf refried beans 1/4 cup gf yogurt 1/4 cup chives, chopped 1 teaspoon salt 1/4 teaspoon pepper
Directions
To roast garlic: Preheat oven to 350 degrees F. Cut 1/4 inch off top of garlic bulb, exposing cloves. Rub garlic bulb with olive oil and wrap completely in foil. Bake for 45 minutes.
When roasted and cool enough to handle, squeeze each clove from it’s skin.
For puree: Using a food processor, blend together all ingredients, including all of the roasted garlic cloves.
Serve with raw vegetables, gf corn chips, gf crackers or gf bread.
