Serves 4 Difficulty
4 cups, strawberries, fresh & hulled 1/4 cup sugar 1/2 cup cream 1 Tablespoon fresh lemon juice
For topping: 5 kiwis, peeled 2 Tablespoons water 2 Tablespoons sugar
Place strawberries in a large plastic bag and place in freezer for about 4 hours. They must be completely frozen.
After berries are frozen, place in a food processor, blending them into an icy texture, about 1-2 minutes. You may need to turn the processor off and scrape sides down frequently. Keep processing until berries are completely processed, so that there are no lumps. Add sugar, lemon juice and cream and continue processing until mixture is smooth.
Transfer to a container and place in freezer.
For topping: Cut 4 kiwi in pieces and place in a food processor with water. Process until smooth. Transfer to a bowl and add sugar. Mix until blended.
To serve: Scoop strawberry freeze into individual bowls and top with kiwi topping. Garnish with remaining kiwi slices.
