Baked, Halved Cornish Hens

Ingredients

2 cornish game hens
2 cloves garlic, minced
salt and pepper
Directions
Preheat oven to 450 degrees F.
Cut hens in half along breast bone and cut through each side of backbone, discarding backbone. Rinse hens and discard visable fat. Pat dry and place on broiler pan, skin side up. Rub minced garlic on each hen half and sprinkle with salt and pepper. Bake hens at 450 degrees for 30 minutes, then reduce temperature to 350 degrees and continue baking for 30 more minutes, or until done. Serve each person 1 half hen.
