Olive oil 1 garlic clove, cut in half Gf French bread baguette 8 ounces mozzarella cheese, sliced in thin strips 1 large tomato, diced 2 Tablespoons fresh basil, finely chopped Salt & freshly ground black pepper to taste
Directions
Cut baguette into 1/4" slices. Toast slices under broiler for 30 seconds per side, or until nicely browned. Rub one side of each toast with cut half of garlic clove.
Combine tomatoes and basil in a small bowl. Season with salt and pepper to taste. Set aside.
Top each slice with mozzarella and broil just until cheese is bubbling and beginning to brown. Top each slice with tomato mixture. Serve immediately.
