2 pounds boneless pork loin, cut into 1" cubes 1 teaspoon salt 1/4 teaspoon fresh ground pepper 1 Tablespoon olive oil 1 Tablespoon fresh lemon juice 1 garlic clove, crushed 1 cup red currant jelly 1 Tablespoon dry white wine 1/4 teaspoon ground ginger 1/4 teaspoon ground cardamom 1/8 teaspoon ground cloves
Directions
In a medium bowl, toss pork, salt, pepper, oil, lemon juice and garlic. Cover and marinate for 1 hour.
Add jelly to a small saucepan; cooking over medium heat until melted. Add remaining ingredients, reduce heat and simmer for 2 minutes. Let sauce cool.
Prepare a grill.
Thread pork onto skewers and place on oiled grill over a hot fire. Turn frequently until meat is browned on outside and no longer pink on inside; about 10 minutes.
