1 cup quick-cooking grits 1/2 cup goat cheese, crumbled 1 Tablespoon butter Olive oil
Directions
Cook grits according to package instructions.
Stir in cheese and butter until melted.
Transfer mixture to a buttered loaf pan and let cool. Cover and refrigerate until firm, about an hour.
Prepare a grill.
Cut grits into slices, squares, triangles or rectangles. Pieces should be about 1/2" thick. Brush both sides with oil and grill over a medium-hot fire until outsides are browned.
