For topping: 1 onion, chopped 2 tomatoes, chopped 2 avocados, sliced 1 cup Jack cheese, grated 1/2 cup sliced black olives Gf salsa
Heat a large non-stick skillet over medium-high heat and add 1 Tablespoon olive oil. When hot, add onion and saute until translucent. Add garlic and saute for 1 more minute. Remove from pan.
Add remaining oil. Add chicken and cook and stir until browned. Add chili powder, cumin, salt and pepper. Stir to blend spices.
In a small saucepan, heat refried beans.
To serve, divide greens equally into 4 tostado bowls. Top greens with equal amounts of refried beans; top beans with chicken mixture; top chicken with equal amounts of onion, tomatoes, cheese, avocado slices and olives. Serve with salsa.
