Ingredients
2 eggs, lightly beaten 1 cup gf plain or vanilla yogurt 1 Tablespoon canola oil 1/4 cup gf flour 1-1/2 Tablespoons sugar 1/4 teaspoon kosher salt 1/4 teaspoon baking soda Pure maple syrup Powdered sugar
Directions
Preheat a griddle or large frying pan over medium heat. Lightly butter griddle.
In a medium bowl whisk together eggs, yogurt, canola oil, gf flour, sugar, salt and baking soda.
For each pancake, spoon 1 tablespoon of batter onto griddle or frying pan. Cook until top of pancakes bubble and some of the bubbles have popped. Turn pancakes and continue to cook until the underside is lightly browned. Serve immediately with warm pure maple syrup and sprinkle with powdered sugar.
